Head Chef18 years’ experience
Arjun trained in Kathmandu and Delhi before bringing his charcoal-tandoor craft to Japan. He has led the Shimosone kitchen since it opened, cooking the northern-Indian classics he grew up with — slow-built curry bases, breads pulled fresh from the tandoor, and biryani layered by hand.
